Ingredients:
4 cups vegetable stock
2 cups jasmine rice
½ cup cashews
¼ cup fresh chives
¼ cup diced red peppers
¼ cup minced ginger
4 tablespoons olive oil
To taste kosher salt
To taste pepper
Preparation:
1. In a pan, bring stock to a boil and then add rice. Cook according to directions.
2. When rice is done, fold in the cashew, chives, r ed peppers, minced ginger and olive oil.
3. Season to taste with salt and pepper.
