Mickey Strawberry Shortcake Recipe! Make your own! #DisneyFamily

There’s something about fresh strawberries when the weather is nice. It’s a perfect treat when it’s hot outside and one that I usually look forward to, especially when we make strawberry shortcake! Speaking of, Disney Family put out this recipe for strawberry shortcake that of course has a Disney twist. Read below to find out how to make your own Mickey Strawberry Shortcake!

Mickey Strawberry Shortcake

Ingredients

1 cup strawberries
1/4 cup sugar
2 cups flour
4 tsp sugar
1/4 tsp salt
2 1/2 tsp baking powder
1/2 cup plus 1 Tbsp softened butter
1 1/2 cups whipping cream
1/4 tsp vanilla extract Mickey cookie cutter

Directions

Slice the strawberries and place in a bowl. Mix in 1/4 cup sugar and let sit for 30 minutes.

Preheat oven to 450 degrees F.

In a large mixing bowl, sift together flour, 4 teaspoons sugar, baking powder, sugar and salt. Add in 1/2 cup butter and mix until crumbly. Add 3/4 cup cream and mix to a soft dough. Knead dough for one minute on a lightly floured surface.

Roll dough out to 1/2 – inch thickness. Use a Mickey cookie cutter to cut out shapes. Place shapes on a lined baking sheet. Melt remaining 1 tablespoons butter and brush on shapes. Sprinkle with a little sugar if desired.

Bake for 10-15 minutes, or until golden brown. Let cool.

Beat remaining cream until thickens. Add vanilla and beat again until thick.

Slice the shortcakes in half, lengthwise. Top with a spoonful of cream and berries. Cover with top half. Add more cream and berries if desired. Serve immediately and enjoy!
