Celebrate National Margarita Day (Feb 22) with José Andrés’ Signature Salt Air Margarita

Who wants a margarita?

With National Margarita Day around the corner, I’d like to share José Andrés’ Salt Air Margarita, a signature cocktail inspired by the foam of ocean waves. Unlike classic margaritas and their salted rims, salt is added to the celebrated chef’s innovative cocktail in the form of delicate air, allowing for just the right amount of salt in each sip. The Salt Air Margarita can only be found at Jaleo at Disney Springs, in addition to a few José Andrés Group restaurants like China Poblana in Las Vegas and Oyamel Cocina Mexicana in Washington DC. For those looking to make the cocktail at home, you’re in luck! Here’s the recipe!


Cocktail Ingredients + Directions

Ice
1 1⁄2 ounces silver tequila (José likes Milagro)
1 ounce Cointreau or Triple Sec
1 ounce fresh lime juice
A spoonful of Salt Air (recipe follows)

Fill a cocktail shaker with ice. Add the tequila, Cointreau, and lime juice and shake well. Strain into a chilled margarita glass or coupe. Float a good spoonful of the salt air on top and serve immediately.

Salt Air Ingredients + Directions
1 cup water
1 teaspoon Sucro (see Note)
1⁄2 cup fresh lime juice (from about 5 limes)
2 tablespoons kosher salt

Combine the water and Sucro in a small saucepan and heat over low heat, whisking constantly to activate the Sucro until the mixture just starts to bubble. Remove from the heat and let cool. Add the lime juice and salt to the Sucro mixture and blend with an immersion blender until the whole mixture is foamy. The salt air can be used immediately or stored in an airtight container in the refrigerator for up to 3 days.
