Sven’s Carrot and Spice Muffin Bites ~ Recipe

So being that everyone is loving all these yummy baking recipes, I have been on a mission to keep finding you more to enjoy. Right now, as much as some of you might not like it, Frozen is still really big.

One of my favorite character’s in Frozen is Sven. He’s just such a loveable reindeer. One of my favorite parts in the movie is when he is always trying to get Olaf’s nose. It’s just too cute.

Well, I absolutely love carrot cake and most of my kids do to. The Olaf cupcakes that they have at Hollywood Studios right now are absolutely delicious! It’s one of our must do snacks when we head over there. Part of me doesn’t want Frozen Summer Fun to end because I don’t want to see these cupcakes leave!

So, when I saw these muffin bites on Disney Family (photo and recipe courtesy of family.disney.com), I thought that these may be a good alternative. Plus they are a lot smaller than the Olaf cupcake and much better on the hips. LOL! I will be testing these out as soon as possible.

Ingredients

•2 cups all-purpose flour
•1 teaspoon baking soda
•1 teaspoon cinnamon
•1 teaspoon nutmeg
•¾ cup vegetable oil
•½ teaspoon cloves
•¼ teaspoon salt
•1 cup sugar
•¼ pound carrots (2 cups coarsely grated carrot)
•3 large eggs
•2 teaspoons vanilla
•Mini muffin tray
•1 package of cream cheese (softened)
•1 box confectioner sugar
•1 tablespoon melted butter

How To Make It

⦁ Preheat oven to 350 degrees. In a large bowl, sift together flour, baking soda, cinnamon, nutmeg, cloves, and salt.
⦁ Coarsely grate two cups of carrot. Add grated carrot to the flour mixture and toss to coat.
⦁ In a separate bowl, whisk together eggs, sugar, vegetable oil and vanilla. Add egg mixture to flour mixture and fold together until combined.
⦁ Grease your mini muffin trey if it is not non-stick. Spoon the muffin batter into the muffin cups until flush with the top of the tray.
⦁ Bake for 15 minutes. Remove from oven and remove muffins from tray to cool on a rack.
⦁ (Optional) To make the cream cheese frosting, whip the cream cheese until fluffy and smooth. Slowly add the confectioner sugar a little at a time until combined. Add a tablespoon of melted butter and whip until incorporated.
