Easter Treat Mickey Shaped Rice Krispies Recipe

INGREDIENTS

6 C rice cereal (such as Rice Krispies)

The Genie Transportation Services

4 1/2 C mini marshmallows, divided

8 TBSP unsalted butter

1 tsp kosher salt

1 bag white candy melts

Sprinkles

Special Equipment

Mickey Mouse head cookie cutter

Lollipop or popsicle sticks (if desired)

Parchment paper
INSTRUCTIONS

Pour the rice cereal into a mixing bowl and set aside.

Line a 9×13” baking pan with parchment paper and set aside. Also, line a baking sheet with parchment paper and set aside.

In a large saucepan, melt the butter and salt together, swirling gently until it’s combined. If you really want to take this up a notch, make brown butter by allowing the butter to cook until it turns golden brown with tiny flecks throughout.

Pour 4C of mini marshmallows into the butter. Remove from heat and stir together until completely combined.

Add marshmallow-butter mixture to the rice cereal and mix completely.

Gently fold in the remaining 1/2 C mini marshmallows.

Press into parchment lined baking dish and set aside to cool and set completely.

Once cool, cut out the treats using the Mickey cookie cutter.

Melt the white candy melts.

Dip the Mickey treats into the melted candy melts. I found it best to dip them face down and then get as much on the sides as possible. You do not have to cover the back of the treat if you don’t want to!

Place on the parchment lined baking sheet. Decorate your treats with sprinkles before the candy melts set.

Let set completely.

Press a lollipop or popsicle stick into the bottom of the Mickey head. You may want to dip the top of the stick into the candy melts, then press into the bottom of the treat to ensure the stick is secure.

Enjoy! Happy Easter Everyone!
