Leading that culinary storytelling is Maria Colon Cabrera, whose job is to ensure that every dish served in the land feels authentic to Batuu. From selecting ingredients and colors to developing creative names and presentations, Chef Maria and her team ask one important question: what would guests actually eat in a bustling galactic marketplace?
A Disney Journey Years in the Making
Chef Maria is a second-generation Disney cast member. Her parents both enjoyed long careers with The Walt Disney Company before retiring, making her leadership role especially meaningful.
Maria began her Disney career as a part-time cook and eventually joined the opening team for Star Wars: Galaxy’s Edge.
“Joining the opening team for Star Wars: Galaxy’s Edge was unlike anything I’ve ever experienced,” she said. “As a Star Wars fan, seeing it built from the ground up was truly a once-in-a-lifetime opportunity.”
Her wife, Olivia, whom she met while working at Disney’s Hollywood Studios, continues her own Disney career in a leadership role at Disney’s Animal Kingdom Theme Park.
Food as Storytelling on Batuu
Creating menu items for Batuu begins with brainstorming and tastings, but it quickly evolves into an exercise in world-building.
Classic dishes are transformed with imaginative twists that make them feel like part of the Star Wars universe. For example, Chef Maria’s Shaak Pot Roast with Kublag Mash takes traditional pot roast, carrots, and potatoes and enhances them with turmeric to create a golden color that looks distinctly otherworldly.
“If it doesn’t make sense for Batuu, it doesn’t belong,” Maria explains.
Working with Lucasfilm
One of the most exciting parts of Maria’s role is collaborating directly with Lucasfilm to ensure that every menu item aligns with Star Wars canon.
